Today is day 7 of my challenge to not eat any type of bread for 7 days. A week ago I decided (out of the blue) to not eat any type of bread for one week. Bread has been a major part of my diet in general and so this is indeed a challenge for me. Challenging myself meant to replace at least 1 meal per day with something else. And in addition I did not want to replace it with food that is bad for my health, I wanted try to replace my meals that contained bread with something healthy. [Read more...]
7 Day Challenge – Day 6
Today was a very different day for me with this challenge. I actually got up at 2.00 AM and drove 120 miles to the trail head for Mount Elbert. Mount Elbert is the second highest peak in the lower 48. It is 14,440 feet high and I had decided to hike/climb all the way to the top. My hike started at 5.12 AM and roughly 3 hours later I had made it. This mountain is brutal – you barely get a break and it just keeps going up – higher and higher. [Read more...]
Day 5 of the “Eat no Bread” Challenge
The challenge is going well so far. I am not feeling starved of bread and I am finding enough other meal options that fit my schedule. It takes a lot more preparation and thought process in creating the meals – especially for lunch and dinner. I am sure time is most often an issue for people when it comes to preparing a healthy meal or a meal in general. Our society makes it too easy to pick up some food on the way home or to load the oven (or microwave) with some processed freezer foods. [Read more...]
